Cauliflower Crockpot Curry Chickpeas
Ingredients
- 1 head cauliflower, cut into florets
- 1 large sweet potato, cubed
- 1 can chickpeas, rinsed
- 3 carrots, chopped
- 3 celery sticks, chopped
- 6 figs, chopped
- 2 cups vegetable broth
- 1 can tomato paste
- 1 tsp garam masala
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
Directions
- Combine all ingredients in the crockpot and stir.
- Set to high for 2 hours and then to low for 2 hours.
- Serve over coconut-scented brown rice with plain yogurt and spiced nuts, if desired.
