Cranberries and rich vanilla ice cream make an extraordinary combo in this luscious parfait.

Ingredients

  • 1 cups sugar
  • 1/2 cup unsweetened cranberry juice
  • 2 cups cranberries
  • vanilla ice cream

Directions

  • Combine sugar and juice in small saucepan; cover. Bring to boil over medium heat. Uncover; continue boiling 5 minutes. Stir in cranberries, simmer 2 minutes or just until skins pop. Cool to room temperature; chill. For each parfait, layer cranberry mixture and ice cream in tall serving dish.

Variation: Substitute cherry juice for cranberry juice and fresh or frozen cherries for cranberries. Cook cherries with sugar and juice for 5 minutes. Stir in 1 tablespoon cornstarch mixed with 1 tablespoon cherry juice; boil 1 minute, stirring constantly.
