Old fashioned cupcakes paired with a simple chocolate frosting.

Ingredients

  • Cupcakes1/2 cup unsalted butter, room temperature
  • 2 1/4 cups brown sugar
  • 3 eggs
  • 2 1/4 cup all purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 3 oz unsweetened chocolate
  • 1 cup sour cream
  • 1 1/2 tsp vanilla
  • 1 cup boiling water
  • Frosting1/2 cup vegetable shortening
  • 1/2 cup butter, room temperature
  • 3/4 cup cocoa
  • 4 cups confectioners sugar
  • 1 tsp vanilla extract
  • 4 Tbs whole milk (or cream)

Directions

  • CupcakesPreheat oven to 350°F.
  • Combine butter and sugar in your stand mixer. Mix until light and fluffy.
  • Add eggs, one at a time, until incorporated. Mix until light and fluffy.
  • Sift together flour, baking soda, and salt in a separate bowl.
  • Melt chocolate in a separate bowl. Add melted chocolate to stand mixer.
  • Add flour mixture and sour cream to stand mixer, alternating the two.
  • Add vanilla and mix well. Add boiling water and mix until incorporated.
  • Bake for 25–30 minutes or until cupcakes pass the toothpick test.
  • FrostingCombine vegetable shortening, butter, cocoa, and sugar in your stand mixer. Cream until light and fluffy.
  • Add vanilla and milk. Whip until light and fluffy.
