Chocolate Sour Cream Cupcakes with Buttercream Frosting
Ingredients
- Cupcakes1/2 cup unsalted butter, room temperature
- 2 1/4 cups brown sugar
- 3 eggs
- 2 1/4 cup all purpose flour
- 2 tsp baking soda
- 1/2 tsp salt
- 3 oz unsweetened chocolate
- 1 cup sour cream
- 1 1/2 tsp vanilla
- 1 cup boiling water
- Frosting1/2 cup vegetable shortening
- 1/2 cup butter, room temperature
- 3/4 cup cocoa
- 4 cups confectioners sugar
- 1 tsp vanilla extract
- 4 Tbs whole milk (or cream)
Directions
- CupcakesPreheat oven to 350°F.
- Combine butter and sugar in your stand mixer. Mix until light and fluffy.
- Add eggs, one at a time, until incorporated. Mix until light and fluffy.
- Sift together flour, baking soda, and salt in a separate bowl.
- Melt chocolate in a separate bowl. Add melted chocolate to stand mixer.
- Add flour mixture and sour cream to stand mixer, alternating the two.
- Add vanilla and mix well. Add boiling water and mix until incorporated.
- Bake for 25–30 minutes or until cupcakes pass the toothpick test.
- FrostingCombine vegetable shortening, butter, cocoa, and sugar in your stand mixer. Cream until light and fluffy.
- Add vanilla and milk. Whip until light and fluffy.
