Ingredients

  • 1 head lettuce
  • Ground black pepper, to taste
  • 1 Tbs vegetable oil for cooking
  • 2 cups bacon, cut into 1/2-inch pieces
  • 3 Tbs white wine vinegar
  • 1/2 cup prosciutto, cut into thin strips
  • 1 Tbs minced chives
  • 1 Tbs minced tarragon
  • 1 Tbs minced chervil
  • 1 Tbs minced parsley
  • 1 garlic clove, peeled and crushed

Directions

  • Wash greens and drain well. Cut or tear into bite-sized pieces and add to large salad bowl.
  • Sprinkle greens with pepper.
  • Pour vegetable oil into skillet over medium heat; once warm, add bacon cubes and cook until crisp.
  • Pour bacon and drippings over greens.
  • Add vinegar to skillet, heat for a few seconds, and pour over greens.
  • Add prosciutto, herbs, and garlic to salad and mix well.
  • Serve immediately.
