Don’t be put off by the unusual directions to this incredibly rich tasting dessert. Serve with vanilla yogurt or ice cream for a real treat!

Ingredients

  • Group 1 Ingredients:225g flour
  • 2g salt
  • 150g sugar
  • 8g baking powder
  • 30g cocoa powder
  • 30mL vegetable oil
  • 5mL vanilla extract
  • 100mL non-fat milk
  • Group 2 Ingredients:100g white sugar
  • 100g brown sugar
  • 85g cocoa powder
  • Also: non-fat cooking spray and 1 cup (240mL) boiling water

Directions

  • Preheat oven to 350°F (176.6°C). Spray a 9-inch square (23x23cm) pan with cooking spray. In a medium-sized bowl, combine group 1 ingredients and stir well. Pour into sprayed pan. In another bowl, combine group 2 ingredients and mix well. Sprinkle this mixture over the uncooked batter in the pan. Pour the boiling water gently over the top. Bake for 45 minutes. The cake will rise to the top and there will be a rich chocolate sauce on the bottom of the pan. Serve hot or warm with a dollop of ice cream or vanilla yogurt.
  • Makes 8 servings.
