Ingredients

  • 3 firm and ripe peaches, diced (with or without skin)
  • 1/4 red onion, chopped
  • 3 Tbs mint leaves
  • 1 tsp grated fresh ginger
  • 1 pinch kosher salt
  • 1/2 lemon, juiced
  • 1 jalapeño, diced and seeded (optional)

Directions

  • Combine all ingredients in a large bowl and refrigerate until ready to serve.
  • Salsa is best when it is left to refrigerate a few hours before serving.
