Prepare liver the day you buy it, or store it loosely wrapped in the refrigerator for no more than one day. Store hearts loosely wrapped in the refrigerator for no more than two days. Store kidneys loosely wrapped in the refrigerator and use the same day as purchased. Store brains loosely wrapped in the refrigerator and use the same day as purchased. Store sweetbreads loosely wrapped in the refrigerator and use within 24 hours of purchase. Store tripe loosely wrapped in the refrigerator for no more than one day. Fresh tongue should be refrigerated for no more than one day. If you want to keep variety meat longer than 24 hours, it’s best to freeze it as soon as you get it home. Check with the butcher to make sure the meat has not been previously frozen. To freeze, wrap meat in foil or place in freezer bags and store in the freezer. Plan to use it within two to three months. Defrost in the refrigerator overnight; smaller organs may need only a few hours.
