Tropical banana bread for the spring and summertime.

Ingredients

  • 3 large mashed bananas
  • 1/2 cup coconut milk
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup stevia (or sugar)
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup shredded coconut
  • 1/4 tsp salt

Directions

  • Preheat oven to 350°F. Spray a loaf pan with non-stick spray or grease lightly.
  • Mash bananas in a large bowl. Add coconut milk and eggs. Whisk well to combine. Add vanilla extract and combine.
  • In a separate bowl, sift together stevia, flour, baking powder, baking soda, shredded coconut, and salt. Add to mixing bowl with banana mixture. Whisk together until just combined.
  • Pour batter into loaf pan and bake for 50 to 60 minutes or until bread is brown and toothpick comes out clean.
