Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pinch kosher salt
  • 1 pinch pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 2 Tbs olive oil
  • 1/4 cup water
  • 1/4 cup Tabasco sauce
  • 3 Tbs butter
  • 4 leaves lettuce
  • 4 slices tomato
  • 4 slices onion
  • 4 hamburger buns
  • Blue Cheese Dressing1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1 clove garlic, grated
  • 1/4 tsp white pepper
  • 1 pinch kosher salt
  • Ranch Dressing1/2 cup reduced-fat buttermilk
  • 1/4 cup mayonnaise
  • 1 clove garlic, grated
  • 2 Tbs grated onion
  • 1/2 tsp lemon juice
  • 1 tsp fresh, chopped chives
  • 1 tsp fresh, chopped parsley
  • 1 pinch kosher salt
  • 1 pinch pepper

Directions

  • Preheat skillet. Pound the chicken breasts with a cast iron skillet until they are 1 inch thick.
  • Salt and pepper chicken. Sprinkle each breast with paprika and cayenne pepper. Drizzle pan with olive oil. Brown chicken on each side and remove from skillet.
  • De-glaze pan with water. Add Tabasco sauce and butter to pan (or replace this with wing sauce). Add chicken back to pan and simmer for about 5 to 10 minutes until sauce has thickened.
  • Combine ingredients for blue cheese in one bowl and mix well.
  • Combine ingredients for ranch in another bowl and mix well.
  • Serve warm buns topped with chicken breasts and sliced vegetables. Serve alongside blue cheese and ranch.
