Morning Glory Muffins
Ingredients
- 2 cups whole wheat flour
- 2 1/2 cups white flour
- 2 1/2 cups sugar
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 2 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup shredded coconut
- 1 cup raisins
- 2 apples, peeled and grated
- 4 carrots, peeled and grated
- 1 15 oz can crushed pineapple, drained
- 1 cup mandarin oranges, drained
- 6 eggs
- 1 1/2 cups applesauce
- 1/2 cup vegetable or canola oil
- 2 tsp vanilla
- Coarse sugar (optional)
Directions
- Stir together the flours, sugar, cinnamon, nutmeg, ginger, baking soda, baking powder, and salt in a medium-sized bowl. Set aside.
- In a large bowl, combine the remaining ingredients and stir to blend well. Slowly add in the dry ingredients until fully incorporated.
- Fill greased muffin tins 3/4 full. If desired, sprinkle coarse sugar on top of the muffins. Bake at 350°F for 30 to 35 minutes.
