Ingredients

  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/3 cup applesauce
  • 2 Tbs vegetable oil
  • 2 eggs
  • 3/4 cup whole milk
  • 2 tsp vanilla
  • 1 1/3 cups flour (white, wheat, or any combination of the two)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1 cup oats (old-fashioned or quick-cooking)
  • 1 large peach, diced

Directions

  • Combine the first seven ingredients in a large mixing bowl and beat/mix until well combined.
  • Combine remaining ingredients, except peaches, in a separate bowl and whisk for 1 minute.
  • Slowly add to wet ingredients and stir just until combined. Fold in peaches.
  • Pour batter into greased muffin tins and bake at 400°F for 15 to 20 minutes.
