Ingredients

  • 1/4 cup chopped onions
  • 1 Tbs vegetable oil
  • 1 lb ground beef
  • 8 oz tomato sauce
  • 1/2 tsp salt
  • 1 tsp red chili seasoning
  • 12 premade tamales
  • 2 cups whole-kernel corn, drained
  • 1/4 cup chopped black olives
  • 1/2 cup grated Monterey Jack cheese

Directions

  • Preheat oven to 350°F.
  • Warm vegetable oil in skillet and sauté onions until caramelized.
  • Add beef and brown.
  • Add tomato sauce, salt, and chili seasoning; mix well and remove from heat once flavors are well incorporated.
  • Remove tamales from husks and mash in a bowl; stir in corn and olives.
  • Grease a 2-quart casserole dish with vegetable oil and place half of tamale mixture at bottom.
  • Add meat mixture as next layer and top with remaining tamale mixture.
  • Sprinkle with grated cheese.
  • Bake for 1 hour.
