Yellow-Eye Beans

Soak the beans overnight and cook them like any other variety of white beans—for about 20 minutes in a pressure cooker or 1 1/2 to 2 hours on top of the stove. 1 cup of dried yellow-eye beans makes approximately 2 1/2 portions of cooked beans.
